IT WAS AN IMPORTANT CONSIDERATION IN WINERY DESIGN TO RESPECT ITS NATURAL CHARACTERISTICS AND ADAPT TO THEM SO THAT THE PROPERTY WILL BE IN HARMONY AS MUCH AS POSSIBLE.

The thirty terraced plantations formed on four boards perfectly adapt to the bed of the Lajvér stream, which provides a special and natural microclimate for the estate. This not only means that there are several degree temperature differences between the lower and upper terraces throughout the year, but also that the water content of the soil is varied. The valley, as a natural wind tunnel, ventilates the foliage and clusters of the plantations, thus helping environmentally conscious viticulture. This variety allows all of our twelve grape varieties to feel at home.

The ultramodern, clean-lined building was built around the concept of uncompromising processing. Our goal was to create an architecturally outstanding building that fits well into the landscape, much of which being underground. During construction, we sought to use natural materials such as wood, concrete, stone, metal and glass. The facility perfectly meets all the necessary functions: it can serve as a visitor centre, wine bistro, industrial building, warehouse and cellar. The essence of natural winemaking is the gentle processing of grapes based on modern gravity technology.

Road of vines

We have planted twelve grape varieties, yet we do not make a separate batch of each. Certain varieties taste nicer if they are not bottled on their own. Often, with unusual, novel blends, we can best express what we think of viticulture and winemaking.

When choosing a variety, only quality was the consideration. On each terrace we have installed the varieties that make the best use of its properties, which gives us an unparalleled variety. This diversity allows us to make outstanding wines even in cooler vintages, and we can also exploit the potential of hot vintages. This is confirmed by the 48 domestic and foreign awards won by Lajver wines in the last five years.

Renowned Hungarian and foreign experts have helped us to create a winery between the hills of Szekszárd that makes full use of the possibilities offered by nature with the help of the most modern technology. The processing and cellar, sunk to a depth of thirty meters, utilises the Earth’s gravitational energy and natural heat storage capacity, thus ensuring the most gentle processing possible.

Grapes carefully harvested from vines enter the processing in crates at the highest point of the winery. In the case of this wine, intact bunches are placed on a lattice shaking table, where the grapes are automatically cleansed of most contaminants during gentle vibration. The residue is removed by manual sorting. This is when the berries that are not sufficiently ripe or damaged are also removed. The berries are then gravity fed to the containers or press.

The fermentation is carried out at a temperature of ten degrees at a precisely controlled temperature, under 24-hour supervision.

Our barrels are made of high quality Hungarian and American oak in 225, 300, 500 litre sizes, with different roasting. This way, all our wines get the most proper maturation, so that we are always one step closer to the perfect Lajvér wine.
